Fresh Pasta Cooking Guide

Boil Water
Fill a large pot with water and bring to a rolling boil. Add a generous pinch of salt and a drizzle of olive oil to help prevent sticking.

Add Pasta
Gently place the fresh pasta into the boiling water. Stir gently to separate the noodles.

Cook Time

Fettuccine / Spaghetti / Fiore / Penne: About 3 minutes

Ravioli: About 6 minutes, or until they float to the top

Taste Test
Check for doneness—your pasta should be tender but still slightly firm to the bite (al dente).

Drain & Serve
Reserve a splash of pasta water (great for sauce!) and drain. Toss immediately with your favorite Nonnina’s sauce and enjoy!

Notes

  • Fresh pasta takes considerably less time to cook than dry.

  • The size/ thickness of pasta varies the cooking time.

  • An electric stove can vary the cooking time.

  • Taste test for readiness. Pasta should be al dente.

  • Al dente pasta should be firm to the bite but still tender. If there is slight resistance when you bit into it, it is likely al dente.
