Fresh Pasta Cooking Guide
Boil Water
Fill a large pot with water and bring to a rolling boil. Add a generous pinch of salt and a drizzle of olive oil to help prevent sticking.
Add Pasta
Gently place the fresh pasta into the boiling water. Stir gently to separate the noodles.
Cook Time
Fettuccine / Spaghetti / Fiore / Penne: About 3 minutes
Ravioli: About 6 minutes, or until they float to the top
Taste Test
Check for doneness—your pasta should be tender but still slightly firm to the bite (al dente).
Drain & Serve
Reserve a splash of pasta water (great for sauce!) and drain. Toss immediately with your favorite Nonnina’s sauce and enjoy!

Fresh pasta takes considerably less time to cook than dry.

The size/ thickness of pasta varies the cooking time.

An electric stove can vary the cooking time.

Taste test for readiness. Pasta should be al dente.

Al dente pasta should be firm to the bite but still tender. If there is slight resistance when you bit into it, it is likely al dente.
